Savoury, Spicy Korean Mung Bean Noodle Soup

**Serves 2

Savoury, spicy Korean Mung Bean noodle soup

What you need

1 packet of mung bean noodle (cut noodles in half as they can be very long)

2 tbspn of Bovril or Marmite

1 cube of organic chicken stock

Dried Seaweed or any kind of vegetable

1 packet of enoki mushroom (trim off roots and pull apart)

2 tbspn of spicy korean paste (Gochujang)

2 organic chicken eggs

What's Next

Boil a pot of water with spicy korean paste, dried seaweed (if using fresh vegetable, add 3 minutes before serving), chicken stock and Bovril for about 10 minutes

Simmer for about 20 minutes (add more Bovril or spicy paste according to taste)

Soak the noodles in boiling water for about 5 minutes, drain

Add noodles to the soup, add enoki mushroom and stir in eggs
